Dried whole in the fruit on the wide plateaus of the Cerrado Mineiro, which is what gives this lot its heavy sweetness and almost no perceptible acidity. Yellow Catuai, machine-picked at full ripeness.
We push it to medium-dark for a cup of roasted peanut, dark cocoa and baked bread. It is the coffee we reach for when we want milk drinks that still taste of coffee after the steam wand.
Thick body, long finish, and very hard to over-extract — a good bag to learn espresso on.
